Red Bean Salsa Salad

This red bean salsa salad is refreshing and can be made in advance!

Yield: 6 servings (serving size 1/2 cup)


In medium bowl, combine all ingredients and mix well. Cover and refrigerate at least one hour to blend flavors. If desired, garnish with lime slices.


  • 1 15.5-oz. can red beans, rinsed and drained
  • 1/4 cup chopped green onions
  • 1 large tomato, seeded and chopped
  • 1 serrano pepper, seeded and chopped
  • 1 tablespoon chopped fresh cilantro or parsley
  • 1 tablespoon fresh lime juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon coarsely ground black pepper
  • Lime slices (optional)
