Pinto Hummus
Ingredients:
- 1 16-ounce can pinto beans, drained and rinsed
- 3 Tablespoons fresh lemon juice
- 1¼ Tablespoons tahini (ground sesame seed paste)
- 1½ Tablespoons olive oil
- 2 garlic cloves, peeled
- 1 Tablespoon toasted pine nuts
- 1 Tablespoon minced fresh parsley
Method:
Place beans and next 4 ingredients in a food processor; process until smooth. Spoon hummus into a bowl. Top with pine nuts and parsley. Serve with pita bread wedges or pita chips, or use as a spread for pita sandwiches.
